The domaine of Simon Bize was founded in 1890 by Simon Bize, who began practicing viticulture with a few hectares of vines in the middle of the phylloxera crisis. In 1918, the estate was passed to his son (another Simon), who increased the holdings, and then in 1950 to his son (also Simon), who built up a portfolio of customers. Then, in 1972, his son, Patrick Bize, became the one who solidified the recognition of the wines.
Patrick strove to reflect a more classic vision of Burgundy, far from what was fashionable at the time. After his sudden death, in 2013, his wife, Chisa Bize, and his sister, Marielle Grivot-Bize took charge of the domaine. His son Hugo joined the domaine after completing his winemaking studies. Guillaume Bott and his wife, Tomoko (who have their own domaine in Chanterêves) also help with winemaking at the domaine.
A blend of their plots from the Village, this is 100% whole cluster. 4-5 day cool maceration at 15°C. Ambient yeast fermentation with pump-overs and foot punch-downs. Aged for 12 months in barrels (0-20% new). Racked once.
